2006 AAAS Annual Meeting -- Understanding and Nourishing the Roots of Food Quality
The typical American diet contains too many calories, too much added fat, sugar, and salt, and not enough fiber, fruits and vegetables. The nutrient content and quality of several foods has declined over the last half-century as a result of how food is grown, processed, and prepared. The "Roots of Food Quality" Symposium, organized by Organic Center board member Dr. Kathleen Merrigan, reviews these trends, identifies some root causes, and presents encouraging data showing that organic farming can enhance the concentrations of essential nutrients and antioxidants.
