Crustless Organic Quiche

The crust on a quiche can be delicious, but it’s also unnecessary and just adds extra fat and carbs.  Of course, if you prefer your quiche with a crust, simply prepare a standard piecrust made of whole wheat flour, in a 9” pie pan.  Pre-bake your crust for 35-45 minutes, until lightly browned.

This recipe is for a vegetarian, broccoli and garlic quiche, but it can easily be customized with added ham, sundried tomatoes, or other ingredients.

Ingredients

  • 6 organic eggs
  • 1 cup organic half and half
  • ½ cup organic cottage cheese
  • ½ cup plain organic greek yogurt
  • 3 cloves of garlic – crushed
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cayenne pepper – plus additional for the top
  • ½ teaspoon salt
  • 3 small heads of organic broccoli
  • 1 ½ cup organic cheddar cheese
  • ¼ cup grated organic parmesan cheese

Directions

Preheat oven to 375 degrees and lightly grease a 9″ deep-bottomed pie pan.

Slice the broccoli into small flowers and steam until bright but still firm, then blanch in cold water to stop the cooking process.

In a large bowl whisk the eggs until smooth. Add in the next 7 ingredients (through the salt) and whisk or stir well until completely blended.

Pour the egg mixture into your pie pan. Evenly distribute the broccoli around the pan then sprinkle the cheeses on top.

Bake in a 375 degree oven for 45-50 minutes or until set and lightly browned.

Remove from the oven and allow to set for 20 minutes.

Serve with a side of lightly dressed greens.
