Lemon-Ginger-Grape Granita

The end of summer has arrived, but that doesn’t mean it’s not still hot outside! Celebrate your final warm evenings with this delicious and easy dessert, and remember to choose organic grape juice to increase your antioxidant intake!

The Science

A study published in Food and Chemical Toxicology compared the difference in antioxidants found in organic and conventional white and purple grape juices. The researchers compared eight different juices and quantified levels of beneficial antioxidants including polyphenols, anthocyanins, resveratrol, catechin, epicatechin, procyanidins, and ascorbic acid in the different juice samples.  Results demonstrated organic grape juice contained significantly higher levels of total polyphenols and resveratrol than conventional grape juice.

The Recipe

Ingredients

  • 1 cup water
  • ½ cup organic sugar
  • 2 cups organic 100% white grape juice
  • ¼ cup fresh organic lemon juice
  • 1 Tbsp. fresh organic lemon zest
  • 1 tsp. fresh organic ginger very finely grated

Directions

Combine all ingredients in a large sauce pan and bring to a boil for about 10 minutes, stirring occasionally. Remove the mixture from the heat and allow to cool.  Strain the mixture through a fine mesh strainer to remove any solids, and transfer the liquid to a baking pan.  Place the pan in the freezer.  Mix thoroughly with a fork every 30 minutes for about 4 hours.  It is important to stir well every 30 minutes to avoid the formation of larger pieces of ice. Scoop into a bowl and serve.
