Alexandre Farm's Spicy Pickled Eggs

 

The (in)credible science 

Eggs provide an affordable option for an important source of protein, but not all eggs are considered equal. A recent study published in the journal Acta Scientiarum Polonorum Technologia Alimentaria compared the overall quality and nutritional composition between organic and conventionally produced eggs. Organic eggs came out on top with larger yolks and more macronutrients of sodium and potassium. 

The Recipe 

This spicy pickled egg recipe is the best recipe for some old fashion pickled eggs. Filled with some of our favorite spices like habanero peppers, jalapeno peppers, red pepper flakes and your choice of hot sauce. Enjoy the heat!

20 minutes  to make, 2 weeks to refrigerate 

Ingredients 
 

48 large Alexandre Kids Pastured Eggs, hard boiled and peeled

4 cups apple cider vinegar

1 onion, sliced

8 habanero peppers

7 jalapeno peppers

2 Tbsp red pepper flakes

5 dashes of hot sauce of choice

2 Tbsp salt

3 Tbsp mustard seed

3 pinches alum

4 Tbsp peppercorns

5 cloves of garlic

1 cup carrots, sliced

1 cup cauliflower, sliced

 
Instructions

Combine all ingredients other than eggs in a large saucepan. Boil for 15 minutes. Put eggs in large glass jars or preferred pickling containers. Pour boiled mixture over eggs and lightly stir to distribute ingredients. If you didn’t fill the whole container, top it off with hot water. Refrigerate for 2 weeks. Enjoy
