The organic cacao in this recipe isn't just delicious: it can also help build environmental and economic sustainability in the tropics. One study found that organic cacao production offered more economic and environmental sustainability than conventional cacao production. Using the SMART-Farm tool to measure roughly 300 variables of sustainability across nearly 400 organic and conventional cacao farms, the study found that organic farms had higher profitability (20%), more gender equity (27%), less land degradation (24%) and water use (29%), fewer greenhouse gases (22%), and more biodiversity (26%).

 

The Recipe

Ingredients 
  • 2 Large avocados, peeled, pitted, and cubed
  • ½ cup unsweetened cocoa powder
  • ½ cup brown sugar (You can use maple syrup, honey, or a ripe banana for a different flavor)
  • 1/3 cup of any kind of milk you prefer (cow's milk, coconut milk, oat milk, etc.)
  • 2 teaspoons vanilla extract (Feel free to experiment with almond, coconut, or mint extract for unique flavors)
  • 1 pinch ground cinnamon (or adjust with nutmeg, allspice, cloves, or ginger for a different twist)

 

Instructions 
  1. In a blender or food processor, combine the peeled, pitted, and cubed avocados.

  2. Add the unsweetened cocoa powder to the avocados.

  3. Pour in the sweetener of your choice, whether it's brown sugar, maple syrup, honey, or a ripe banana.

  4. Add the milk of your preference, such as cow's milk, coconut milk, oat milk, or any other milk alternative.

  5. Incorporate the vanilla extract for a classic flavor or experiment with almond, coconut, or mint extract for a unique twist.

  6. If desired, add a pinch of ground cinnamon for a touch of warmth, or try nutmeg, allspice, cloves, or ginger for different flavor profiles. Adjust the amount according to your taste preferences.

  7. Using an immersion blender, high-powered blender, or food processor, blend all the ingredients until the mixture becomes smooth and creamy.

  8. Transfer the avocado chocolate pudding into a container and refrigerate it for approximately 30 minutes or until it's chilled and ready to enjoy as a pudding.

  9. Alternatively, for a frozen treat, spoon some of the mixture into an ice cube tray and place it in the freezer. After a few hours, you'll have delicious avocado chocolate fudgesicles.

  10. You can also use this creamy mixture as a delightful frosting for cakes or other desserts.
